Balinese Delicious Ayam Betutu

Ayam Betutu or Balinese Grilled Chicken is a Balinese traditional steamed or roasted chicken with spices inside. Some of the main spices consist of ginger, onion, cassava, turmeric, garlic, Salam leaves and chillies. These spices are all mixed together and put inside the chicken. After that, the chicken is wrapped by banana leaves tied with a string and grilled in the oven for 2-3 hours. There is also a spicier version of Ayam Betutu with extra spicy sauce called Sambal Matah made from uncooked (raw) onion slices mixed with red chilli and coconut oil. Ayam Betutu is usually served in Balinese traditional ceremonies. But this traditional dish is now very popular and it can be found in hotel and restaurant menus. Ayam Betutu is a popular dish among foreign and domestic tourists.

There are different tastes of Ayam Betutu according to the regions in Bali.
  • Ayam Betutu from Klungkung regency is mainly stuffed with cooking spices.
  • Ayam Betutu from Gilimanuk regency is popular with its hot and spicy flavour.
  • Ayam Betutu from Gianyar regency is cooked plantain leaf wrapping.
